Original Plymouth Cheese
The Original Plymouth Cheese is a raw cow-milk, waxed-rind, sharp cheese with rich notes of butter, fruit and nuts.
At the crossroads between traditional farmhouse cheddar and Colby, it’s a cheese which requires a minimum of 10 months of aging.
It’s still made by hand and in small batches, with a recipe which is not far from the original recipe of Plymouth cheese, developed by John Coolidge, father of Calvin Coolidge.
The recipe requires cutting and continuously stirring the cheese curds for hours, just like the first settlers used to do – hence the name “granular curd cheese”.
